Soft pecorino cheese

The rind is absent, white or ivory, with a soft texture, white or ivory. The holes are absent.

It is a fresh soft cheese with a delicate taste, not aggressive but at the same time enveloping, because it is always a little damp and continues to release the whey. Its texture is soft and creamy. It is made with natural starters cultures. No commercial starter strains and other additives are used.
