GENTLE RICOTTA CHEESE
Gentle sheep’s milk ricotta
The paste is soft, fluffy, white in color.
The original fresh sheep Ricotta cannot be called cheese because it is made with only one ingredient: sheep’s milk whey. To make it gentle, one more ingredient is needed: time. The cheesemaker heats and slowly and patiently mixes the whey until the first ricotta flakes rise to the surface. This method makes it possible to obtain a frothy, creamy ricotta with a delicate and pleasant flavor.
The Ricotta Gentile is included in the list of Traditional Agri-food Products (PAT) of Sardinia, established by the Ministry of Agricultural, Food and Forestry Policies.
