Streched curd pecorino cheese
Mozzarella has no rind, but a tender skin with a white, smooth and shiny surface. The paste is fibrous and may have alveoli containing milky liquid. It has no holes, it is soft and quite elastic.

It is a stretched curd cheese with whole raw sheep’s milk. It can be considered a rarity for technical reasons relating to the difficulty of stretching the paste; the responsible for its softness and its creaminess. It is made with natural starters cultures. No commercial starter strains and other additives are used.
