Soft pecorino cheese
The rind is flowery, wrinkled, white or gray in color. The paste is soft, ivory in color. The holes are fine and regularly distributed.
This sheep milk cheese with raw dough is produced with whole raw sheep’s milk and is characterized by a white and velvety felt and a soft and creamy ivory paste. The responsible for this peculiar flowering and its consistency is Penicillium Candidum, an edible microscopic fungus that is inoculated during processing.
It is made with natural starters cultures. No commercial starter strains and other additives are used.
